How do I link voice to cockpit buttons and switches that are not related to key presses?

That depends on which game you're referring to.
Most flight simulators have some type of interface that allows you to manipulate certain systems directly, but that is specific to the sim you're working with.

Yes of course FSX has all actions via keyboard keys but some aircraft you purchase have buttons or switches not linked to keys but activated through code.

You can use
LVARs
for some aircraft, but because many of the more complex addons use custom components behind the scenes, that won't work for everything.
FSUIPC
can work with many of the third part addons(PMDG for example), and if I remember correctly can also map functions to custom keybinds.
