Fresh Windows 7 X64 install, Fresh Voice attack install and Fresh Verity Install.
Profile Drop down only shows the default "My Profile"
Have uninstalled it and reinstalled it.
Yes it is a Paid Copy

Did you import the profile (.vap)? From what I recall, there is an instruction set that comes with that product that needs to be performed AFTER the installation.

Hmmm... I wonder if there is something missing on your machine.
You might want to try running a system scan to see if a problem is visible:
