I tried opening my .vac file in notepad++ but it just doesn't show any actual text to edit.

I seem to remember being able to edit profiles in a text editor back in the day so I could quickly edit commands without having to open the VA edit function. Has that been changed or am I just missing something? Thanks.

You need to export the profile "Expanded as XML", otherwise it will be compressed and not human-readable.
Do note that editing profiles in this manner is not supported; If you run into issues with a profile you have edited manually, you'll need to revert to a version that wasn't tampered with (it is your responsibility to make a backup of your profiles in their original state).

Is it just my memory playing tricks on me or was it originally in a document format not just XML?

.vap files have always contained XML-formatted data.

2014 was such a simpler time for me. I had no problems editing the profiles back them. Maybe I was just smarter?
